| Description: | В статье исследованы правовые аспекты необходимости внедрения ХАССП (Hazard Analysis and Critical Control Point – анализ рисков и критические контрольные точки) в технологический процесс производства пищевой продукции. Рассмотрены нормативные документы, которые определяют принципы и основы концепции ХАССП. Проанализирована статистка по применению системы ХАССП на различных предприятиях. The article touches upon the importance and necessity of using HACCP in food production. Regulatory documents for disclosing the basis of the HACCP concept are considered. The results of studies and statistics on the application of the HACCP system at the various enterprises of food. |
